Mitton played professional hockey in the East Coast Hockey League for the Utah Grizzlies and Cincinnati Cyclones from 2017-20.
A former forward, Mitton earned the Professional Hockey Players' Association's Heart, Hustle, Desire Award, which is presented to a player in the ECHL who is considered by their peers to be the hardest working player in their respective League's Conference, demonstrating heart, hustle, and desire every night, both on and off the ice.
In 2021, Mitton dove into the coaching world with the Niagara North Stars Triple-A Under-16 team. Mitton also owns Athlete Farm Niagara, a high-performance training facility in St. Catharines, with his wife, Danielle. He has been training elite-level athletes from the NHL to the National Collegiate Athletic Association (NCAA).
